Chestnut and Sausagemeat Turkey Stuffing

This stuffing can be made either with fresh chestnuts or with
natural unsweetened chestnuts, which are generally available
in jars or cans.
Recipe Ingredients
2lb of chestnuts or 1lb of canned chestnuts
1½ lb of pork sausage meat
Salt and pepper to season
Stock or water Preparation and cooking instructions
If you are using fresh chestnuts for this recipe these will
need to be prepared in the following way: First place the
chestnuts into a saucepan of boiling water for a few minutes.
Then drain and when cool enough to handle remove the skins.
Next put the skinned chestnuts back into a saucepan and cover
with boiling water but this time simmer the skinned chestnuts
gently for about one hour or until they are tender.
When tender drain and then put the chestnuts or canned chestnuts
into a large mixing bowl, and mash them very well.
Now add the sausagemeat, season with salt and pepper, and
mix everything together. Then add just enough stock or water
to bind the stuffing together.
