You will also need
A 1½ quart casserole Preparation and cooking instructions
Begin by buttering a casserole, then peel the sweet potatoes.
Next put the potatoes into a saucepan, rinse them and then
cover them with boiling water from the tea kettle, and cook
them until they are tender.
After that preheat the oven to 350°, then drain the potatoes
and then put them into a large mixing bowl or drain the canned
potatoes and put them into the mixing bowl. Meanwhile grate
the rind of the orange until you have 1 teaspoonful.
Now place the butter in a small saucepan and heat very gently
until melted. To the potatoes add the teaspoonful of grated
orange rind together with the sugar, cinnamon, nutmeg and
cloves, the bourbon, the eggs and the melted butter and, using
an electric hand mixer, mix together until the potatoes are
fluffy.
Then transfer the potatoes to the buttered casserole, place
the marshmallows on top and bake for 20 minutes or until the
marshmallows are golden.
Have a happy Thanksgiving !
