Thanksgiving Pumpkin Soup
|
This recipe will make a great introduction to your thanksgiving
meal.
Recipe Ingredients
2lbs of pumpkin ½ pint of water
1½ pints of boiling milk
1½ oz butter
3 slices of stale bread
1 teaspoon of sugar
Salt and pepper Preparation and cooking instructions
First peel the rind from the pumpkin and remove the seeds.
Then chop the pumpkin into small pieces, and put this into
a large pan or stockpot. Add the water, then simmer very slowly
for about an hour to an hour and a half, or until the pumpkin
is tender.
Next press the pumpkin through a sieve and then cut the bread
into small squares. After this pour the milk into a second
saucepan and bring to the boil. Meanwhile return the pumpkin
to the first pan. Now add the boiling milk, the small squares
of bread, the butter and the sugar, and then season with salt
and pepper. Return the soup to the heat, and bring to the
boil, stirring occasionally. Serve and eat.
Have a happy Thanksgiving !
