Parsnips
Melted butter
Flour
Salt and pepper to season
2 tablespoons butter for frying
Preparation and cooking instructions
Begin by peeling or scraping the parsnips, then put them
into a pan of boiling water. Bring back to the boil and simmer
for forty-five minutes. Drain, and then cut the parsnips into
long slices, about a quarter of an inch thick or more.
Season with salt and pepper and then dip, firstly in the
melted butter and then in the flour. Put two tablespoons of
butter into a frying pan and when hot, add the parsnips, in
a single layer, to the pan.
Fry until golden, turning occasionally.
