Recipe Ingredients
1lb mashed potato
3oz breadcrumbs
1oz butter
1 egg (beaten)
Salt and Pepper to season
A little flour
Oil for frying
Potato Croquettes Preparation and cooking
Peel and then chop the potatoes. Now, put the potatoes into
a saucepan and rinse well, drain off the cold water. Next
add boiling water to the saucepan and salt. Bring to the boil
and then simmer, until the potatoes are tender, drain off
the water.
Mash the potatoes a little, using a fork, a vegetable masher
or a hand-held whisk, now add the butter and season with salt
and pepper, continue mashing until the potatoes are smooth.
Next add a little of the beaten egg and stir well. Let the
potato cool a little and then put a little flour on your hands
and roll the potato into sausage like shapes. Now brush each
croquette with a little beaten egg and then roll it in the
breadcrumbs. Fry until golden.
