Recipe Ingredients
1lb self rising flour 2 cups
A pinch of salt
2 oz superfine sugar
3 oz butter
10 fl oz milk
This will make about 25 scones
Scones Preparation & cooking instructions
First pre-heat your oven to 425°F (220°C) and lightly
butter a baking sheet or two.
Next sift the flour and rub in the butter, then add the sugar
and salt and mix together. Now whilst still stirring, add
the milk a little at a time. Then kneed the mixture to a soft
dough and after flouring your rolling-pin and board, roll
out the dough to a thickness of about 1 inch. Now with about
a 2 inch in diameter cookie cutter, cut into rounds. Then
put the scones onto the lightly buttered baking sheet and
sprinkle their tops with flour. Next bake them in the oven
for approximately 15 minutes, although they may need a little
longer or a little less baking time depending on their size.
To serve your scones leave them to cool, then cut them in
half and spread one half with butter and the other half with
butter and strawberry jelly (jelly is called jam in England)
then top this half with the buttered half of the scone. For
that extra special treat, spread one half with butter and
the other half with butter and strawberry jelly and a dollop
of heavy cream, in England this is called double cream. Then
put the two halves back together again - Delicious.
